Sos ili sauce je francuska riječ, u originalu preuzeta od starih Latina, u doslovnom prijevodu znači slano. Stari Rimljani su koristili umake kao svojevrsne konzervanse za meso, povrće i druga jela. U vrijeme bez modernih čuda tehnike, hranu je trebalo sačuvati od kvarenja.
