About the book MESNA JELA
Jela od mesa oduvijek su osnovni
sastojak uravnoteženog i dobro
sastavljenoga tradicionalnog obroka. Za
poseban ručak ili večeru, domišljat će
kuhar poslužiti lagano predjelo, potom
će uslijediti tjestenina, gusta juha ili
rižoto, a ijedno i drugo bit će
osmišljeno prema najvažnijemu
glavnom jelu koje će se zasigurno
zasnivati na mesu. Bilo to nekoliko
tankih svinjskih ili janjećih odrezaka,
komad teletine pečen u bijelome vinu ili
firentinski odrezak na žaru, cjelokupan
će dojam biti skladan i zadovoljavajući.
Jelo od mesa poslužuje se uza salatu ili
jelo od povrća, a svako će jelo popratiti
pomno izabrano vino. Imajući na umu
takvu tradiciju, uza svaki sam recept
predložila prilog i vino. Kako biste se
lakše snašli, podijelili smo kuharicu u
pet poglavlja prema vrsti mesa koje se
upotrebljava: Puretina i piletina,
teletina i govedina, janjetina,
svinjetina i divljač.
