About the book PREDJELA
U jednom od mojih najomiljenijih restorana naručiti
"miješana predjela" znači predati se uživanju u 8—10
malih porcija predjela od povrća, mesa i ribe. Svaki
zalogajčić, poslužen zasebno svakome gostu, dovoljan
je da probudi apetit, ali ne i da ga zadovolji. Niste
dokraja uživali u jednom predjelu, a već vam odnose
tanjur i donose drugi. Jela se tako nižu u crescendu
okusa, sastava i boja sve dok, upravo kada se počnete
pitati hoće li ostatak objeda uopće biti potreban, ne
stigne tanjur tjestenine, a već ste i zaboravili da ste je
naručili, i objed prelazi u sljedeću fazu. Poučak je ove
priče: kada služite predjela, porcije uvijek moraju biti
malene. Radije poslužite više vrsta predjela, a
preskočite jelo od tjestenine. U tom slučaju povećajte
broj predjela, a ne količinu. U ovoj ćete knjizi pronaći
više od 100 prijedloga za pripremu predjela, koja su
rezultat sakupljanja recepata ovisnice o predjelima.
Za lakše snalaženje, predjela su razvrstana u četiri
poglavlja prema glavnom sastojku -povrće, jaja i sir,
morski plodovi i riba, te meso.
